- 1 kg aged basmati rice
Directions:
- Prepare the crispy onions: In a saucepan, heat the peanut oil over medium-high heat. Fry the thinly sliced onions in batches until golden brown and crisp. Set aside to drain.
- Marinate the chicken: In a large bowl, combine the chicken thighs, one-third of the crispy onions, yogurt, chili powder, turmeric, garam masala, ginger paste, garlic paste, lemon juice, one cinnamon stick, 8 cardamom pods, 1 sliced green chili, cumin seeds, cloves, chopped mint, chopped coriander, and salt. Mix thoroughly. Cover and marinate for 4 to 24 hours to let the flavors infuse.
- Prepare the rice: Rinse the rice twice and soak it in water for about 40 minutes. In a large pot, bring water to a simmer and add 1 tablespoon salt, 1 green chili (sliced in half), 6 cardamom pods, 1 cinnamon stick, 2 cloves, and 1 tsp cumin seeds. Once simmering, add the soaked rice and cook for 6-8 minutes, keeping the rice slightly firm (al dente). Drain and set the rice aside.
- Cook the chicken: Heat a large pot on medium-high heat. Add the marinated chicken and cook for 6-7 minutes, stirring frequently to ensure even cooking. Once done, remove half of the chicken and set aside.
- Layer the biryani: In the same pot, spread half of the cooked rice over the chicken. Top with a layer of crispy onions, mint, and coriander. Add the remaining chicken, followed by the rest of the rice, crispy onions, and herbs.
- Steam the biryani: Cover the pot with a clean tea towel and place the lid on top. Set the pot over medium-high heat for 10 minutes, then reduce the heat to very low and cook for an additional 30 minutes. Remove from heat and let it rest for 20 minutes before serving.
